Kansas City BBQ Sauce


Don't be fooled- Homemade sauce is worth every minute of the time it takes to craft it. It's rich, sweet, tangy flavors will make you wonder why you ever bothered with bland, boring, store bought sauce.

2 Tbsp. powdered ancho, poblano or New Mexico chilis

1 Tbsp. fresh ground black pepper

1 Tbsp. dry mustard

1 tsp. ground coriander

1 tsp. ground allspice

1\4 tsp. ground cloves

1\2 tsp. grated nutmeg

up to 1 tsp. cayenne, depending on your taste

1\4 cup neutral flavored oil, such as avocado or grapeseed

1 onion, finely chopped

6 cloves garlic, finely chopped

1 shallot, minced (try local organic store)

1\2 cup tightly packed dark brown sugar

1 cup white vinegar

1\2 cup clover honey

1\4 cup Worcestershire Sauce

1 tsp. ORGANIC liquid smoke- (Optional)

1 32oz. bottle of ketchup


Mix all the spices together and set aside. Heat the oil in a large pot over medium heat and gently saute' the onion, garlic and shallot until tender. Add the spices and mix thoroughly, cooking for 2-3 minutes to bring out all the internal flavors. All the rest of the ingredients and SIMMER the sauce for 30 minutes, stirring often.

Beware of the splatters as they will be HOT.

Don't cook it too long or it will turn fudgey on you and you don't want that. If you desire a very smooth sauce, blend it with a hand blender or a food processor; the chunkiness will depend on how well you chopped up the onions and garlic. preserve as you would any jelly or jam in mason jars. Use as a glaze, dip, brushing sauce, fajita flavoring, etc.
